As you know, our project in Kenmore is underway and we're working towards a Summer 2022 opening. Below are new renderings from our architects that show how we will combine the Phase I Restaurant with the Phase III Brewery. With your help, we can raise enough to complete this full build-out in a single construction effort. This will allow us to achieve significant cost savings and increase production years earlier than originally planned. 

Copperworks Kentucky Tornado Relief American Single Malt Whiskey

For each bottle sold, $40 will be donated to assist Kentucky tornado victims.

Jason Parker grew up in Bowling Green, Kentucky and was there visiting family when tornadoes destroyed part of the town on December 11, 2021. To assist with relief efforts in the area, Copperworks will soon offer a special whiskey release: Copperworks Kentucky Tornado Relief American Single Malt Whiskey. For every bottle sold, Copperworks will donate $40 to the Team Western Kentucky Tornado Relief Fund.

Kentucky Bourbon Barrels

To create this special release, our team turned to whiskey already maturing in barrels that had previously held Kentucky bourbon. To achieve the flavor profile we were after, we blended that cask of whiskey with whiskey that had been matured in a new American Oak cask (cask no. 270, in honor of the area code for western Kentucky).

Both barrels held whiskey distilled from Copperworks Pale Malt recipe and were aged for a minimum of 45 months. Maturing Copperworks whiskey in a used bourbon barrel really allows the flavors of the malt to come through, since the barrel contributes less caramel and vanilla than new oak barrels do. 

This special benefit release is our first to ever use whiskey matured in a used bourbon barrel. We are honored to draw upon the heritage and flavors of Kentucky bourbon to assist in raising much needed funds to help rebuild the thousands of homes in Bowling Green that were damaged or destroyed.

Exclusive Whiskey Release

Each First Cut subscription includes one bottle of a special release of Copperworks American Single Malt Whiskey — Available only with the purchase of a First Cut 2022 subscription.

This year’s release comes from something we refer to as a "Queen’s Run", which produces the most flavorful whiskey a distillery can produce. We've borrowed this term from the rum industry to describe one of our types of distillation. In our distillation process, we make cuts to separate the heads and tails from the hearts of the run. The hearts are what is matured in casks to create our American Single Malt Whiskey, while the heads and tails must be redistilled, generally with the low wines from the next brew. Every so often, we have enough heads and tails to do a re-distillation that is entirely heads and tails, or the "Queen’s Run.”

The whiskey for this year’s exclusive First Cut bottling was redistilled from the heads and tails of three different recipes: Pale Malt, Five Malt, and Baronesse Malt. It was then matured in charred new American Oak casks for 43 months and bottled at its natural cask strength of 59.8% ABV. Only 150 bottles will be released.

Tasting Notes:  Aromas of grapefruit rind, candied orange peel, and lime leaf dominate. The flavor features toffee, red tea, roasted pineapple, cinnamon, and licorice, with a lengthy finish of even more fruit and spice. Another great sipper for our cask strength whiskey fans.

Copperworks Single Cask Washington Peated Whiskey

Last year we released our first ever peated malt whiskey. And it wasn't made from just any old peated malt — it was crafted from locally grown barley that was malted with peat from a bog in Washington State! This malt, produced by Skagit Valley Malting, is the first peated, malted barley produced entirely from ingredients sourced in Washington State.

This year we are excited to bring you a Single Cask, Cask Strength version of our Washington Peated Whiskey. Release 040 was made from a single cask of whiskey that was brewed and distilled with 100% of the Copeland variety of barley grown in Washington’s Skagit Valley, then smoked with Washington peat. It was matured for just over five years in a lightly charred, new American Oak cask. The whiskey was bottled at its natural cask strength, clocking in at 65.5% alcohol by volume (131 proof). This is an extremely limited release of only 201 bottles.

Pacific Northwest Peat

Peat is decomposed organic plant matter that has been compressed in the ground for thousands of years. Harvested Peat is burned during the malt drying process, imparting a distinctive smoky flavor to the barley. The peat used by Skagit Valley Malting was sourced from a lakebed on the Olympic Peninsula. It's the only peat bog we're aware of in Washington State that can be commercially harvested.

The flavors of Washington-sourced peat are different than their Scottish counterpart, for the simple reason that decomposed plant matter in Washington is different than plant matter in Scotland! Washington peat imparts Copperworks whiskey with distinctive and earthy flavors that are uniquely different from its Scottish counterpart. 

Tasting Notes

Aromas of chocolate mint, black tea, and lemon custard lead to flavors of honey, cream frosting, butterscotch, and salted caramel. Flavors carry through to the finish, with lingering smoke and a slight earthiness. A great whiskey for the winter months.

Copperworks Amaro Cask Finished Gin 

It's back! We are excited to announce a new release of our Amaro Cask Finished Gin. This perfect spirit for the holidays was finished in oak barrels that first held Copperworks Whiskey, and most recently held Amaro Amorino from Letterpress Distilling in Seattle. 

A PNW Collaboration

This limited release gin was finished in what we call a 'collaboration cask'. Letterpress Distilling aged its Amaro Amorino in a 53-gallon American Oak barrel that we had used to mature Copperworks American Single Malt Whiskey. After aging the Amaro and then sending the cask back to us, we filled it with our gin and allowed it to rest for nearly 10 months. The end result is absolutely delicious.  

Tasting Notes

The Amaro and gin botanicals create an explosion of spice, made for holiday sipping! Aromas of licorice, orange candy, clove, and jasmine, with a definitive punch of exotic spices, cotton candy, bitter orange, pine tar, and mint that trail into a long finish. Try it neat or in an Old Fashioned cocktail.

Copperworks is proud to join over 1,000 breweries in the fight for change and racial justice, with our Black is Beautiful Whiskey release. 

The Black is Beautiful initiative is a collaborative effort amongst the brewing community and its customers, to bring awareness to the injustices that many people of color face daily. Breweries were asked to brew a beer based on a recipe created by Weathered Souls Brewery out of San Antonio, with all proceeds of this unique brew then going to support African American communities and the continued fight for justice against police brutality. 

While this initiative started as a call to action specifically to brewers, Copperworks asked to join the cause and the organizers were excited to have us involved! 

Our friends at Garden Path Fermentation in the Skagit Valley brewed a mixed-fermentation Imperial Stout, part of which was aged in a Copperworks Whiskey cask. That cask was then returned to us, and used to finish this Copperworks Whiskey for 105 days. The finished whiskey was initially distilled from our Pale Malt recipe and matured for just over 3 years in charred new American Oak.

Tasting Notes

Slightly cloudy in appearance, thanks to the beer, the whiskey opens with aromas of grapefruit, pine, and hard cider. Hoppy citrus notes develop into delicious tastes of tamarind and raspberry, with a long finish of chocolate and sour cherry. The Copperworks leadership team has been knee-deep in the planning, designing, and pre-permitting process with our architect and contractor and we’re excited about our results.

We’ve developed a way to consolidate the first and third phases of our expansion plans which will enable us to add brewing and increase whiskey production much sooner than we expected. And we’ll achieve significant cost savings by combining the construction of these two projects that were previously separate.

We’ve revised our property design to include brewing equipment at our Kenmore restaurant space in the first phase of expansion, rather than in the third phase. Adding brewing capability earlier in the expansion will enable us to increase whiskey production much sooner than anticipated (likely moving our increased production capacity forward by several years) and doesn’t change the amount of whiskey we can produce. We will still increase our current whiskey production tenfold.

The updated architectural drawing below shows the change in the restaurant design to incorporate space for the brewing equipment. The revised design and expedited construction plan accelerates us on our way to producing beer and making more whiskey!

One of our favorites, Copperworks Tonic Cask Finished Gin, has returned! This limited-edition gin is now available at the distillery and in our online store.

A Single Cask
We can produce only a limited quantity of this gin due to the very special cask used. Copperworks Tonic Cask Finished Gin is finished in a barrel that previously held Bradley's Kina Tonic. Before that, the barrel held gin from another Seattle distillery and before that, the barrel was in Kentucky for seven years holding bourbon.

Finishing Copperworks Gin in a barrel with such a storied history produces delicious and distinctive results: it's like a Copperworks Gin and Tonic reduction in a single bottle. If you've never tried it, be prepared for an amazing burst of flavor! This gin makes an especially good replacement for whiskey in a Manhattan or Old Fashioned cocktail.

Tasting Notes
Aromas of burnt orange, cinnamon and French lavender explode from the glass. Bold flavors of orange zest, black tea, curry spices, and sarsaparilla lead to a lingering finish of pepper, fruitcake, and candied citrus peel.

Our latest small batch whiskey is here! Copperworks American Single Malt Whiskey Release 039 is now on the shelves at the distillery and in the online store.

Release 039 was crafted from eight casks of whiskey distilled using the Genie varietal of barley. This particular barley was made possible by our partners at Mainstem Malt, who are dedicated to supplying top-notch malted barley to distillers and brewers in Washington State. It was grown by H.T. Rea Farming (Walla Walla, WA) and malted by LINC Malt (Spokane, WA). The whiskey was matured in charred new American Oak for 36 months.

Salmon-Safe Grains 
This release is the first whiskey ever to be bottled fromSalmon-Safe grains. Salmon-Safe certification represents ecologically sustainable agricultural practices that protect water quality and wildlife habitat. This is also the first time we’ve exclusively used a single variety malt in a core Copperworks Whiskey release. We currently source about 90% of our barley from small, Washington farms, so you’ll have many future opportunities to thank a local farmer for your whiskey.

We do have a limited supply of Release 038 still in stock. Grab a bottle before it sells out for your own side-by-side tasting! 

Tasting Notes
Release 039 offers aromas of rich, stewed fruit, ripe pear, red wine, and pipe tobacco. Flavor notes of candied citrus peel, melon rind, smoked tea, and cedar lead to a long finish of mango, cinnamon, and walnuts, ending with a slightly briny note.

New Release: Copperworks Plum Gin
Plums are in season and so is Copperworks Plum Gin! This customer favorite, which we previously called "Copperworks Plum Cask Finished Gin," was once an extremely limited offering. But it has now secured a spot in our standard lineup. Copperworks Plum Gin Release No. 001 is available for purchase at the distillery and in the online store.

This year's release was produced by finishing Copperworks Small Batch Gin in five charred, new American Oak casks for about 100 days. We then transferred the gin to stainless steel tanks to rest on pitted Italian Prune Plums from two local family farms: Warm Valley Orchard and Lazy River Farm.

A Farm Collaboration
For the past few years, we received a batch of Italian Prune Plums from Warm Valley Orchard on Orcas Island, WA, owned and worked by Bob and Maria Nutt. Bob is a brother of Micah Nutt, one of the founders of Copperworks. We filled various kinds of barrels with the plums and Copperworks Small Batch Gin and when the taste was to our liking, we would release Copperworks Plum Cask Finished Gin, part of what we call our “Experimental Gin Series.”

The gin was so popular that we decided it should become a part of the Copperworks standard line-up of spirits and we intend to offer a new release each year. Though it is still very much a handmade agricultural product, so volumes will continue to be somewhat limited.

Nearly a Pound of Plums in Every Bottle 
We used 1,260 pounds of local fruit from Warm Valley Orchard and Lazy River Farm to create more than 255 gallons of spirits. The yield was 1,397 bottles which translates to almost a pound of plums used to create each bottle.

Tasting Notes
Mulled wine, candied fruit, and baking spice aromas explode from the glass. The flavor is equally bold, with stewed fruit, red wine, and big, fresh plum juice notes followed by tannins and dark cherries.

With that said, here is an exciting first update:

We're thrilled that Copperworks American Single Malt Whiskey Release 038 is the recent recipient of a gold medal (94 points) from the well-respected Beverage Testing Institute (BTI). Release 038 builds on the flavor of our last major release with new complexity from the addition of whiskey matured in a sherry cask. 

Release 038 Tasting Notes: Aromas of rum raisin ice cream and pear balsamic give way to flavors of fig conserves and baked pears, finishing with notes of hazelnut, fruit leather, and dark cherry candy.
